Clean Pumpkin Muffins for Fall Y'all



2/3 cup white whole wheat flour
1 c. pureed pumpkin
3/4 c. water + 2 Tbs buttermilk or plain yogurt or kefir
1/2 c. melted butter or refined coconut oil

1 cup old fashioned oats (not quick cook)
1/2 cup unsweetened organic applesauce
1c. sucanat sugar
2 eggs
1/2 tsp. baking powder
1 1/2 tsp. baking soda
3/4 tsp. salt
1/2 tsp. cloves
1/2 tsp. cinnamon
1/2 tsp. nutmeg
 Mix all ingredients together. Pour into muffins pan sprayed with eat clean cooking spray. Bake at 325 for 30 min or until toothpick comes out clean. Careful not to over bake.

If you grind your own grain..be sure to soak overnight for best nutrient absorption and to break down phytic acid. I used soft white grain for these muffins.

To do the soaked version..mix first six ingredients and soak overnight or 8 hrs.  Then add the rest of the ingredients and follow directions.






I grind my own grain so this is the soaked version..just mix the first 6 cover and leave overnight

Sucanat sugar

Mix in additional ingredients
Bake at 325 for 30 min
