Oatmeal raisin cranberry cookies...made with whole wheat



These are some great oatmeal cookies.  Remember..these are "clean" but they still contain sugar..so limit your intake of them and have them as a treat!!


Eat Clean Oatmeal Cranberry and Raisin Cookies

1cup plus 2 Tbsp whole wheat flour (if grinding grain use soft white)
1 tsp baking powder
3 cups old fashioned rolled oats
1/2 cup wheat germ
1 tsp baking soda
3/4 cup organic golden raisins
3/4 cup unsweetened dried cranberries
1 tsp vanilla
1 cup unsalted organic butter
1 cup coconut sugar
1 cup sucanat sugar
2 large organic eggs

Directions:
Preheat oven to 350.  In electric mixer cream together butter and bot h sugars on medium high speed until light  and fluffy.  Add the eggs, mix on high to combine.  Add the vanilla.
Combine the rolled oats, baking powder, baking soda, and wheat germ in a large bowl and stir.  Add dry mixture in to the butter mixture, mix on low to combine.  Fold in raisins and cranberries.  . 
Line baking sheets with parchment paper or spray with eat clean cooking spray.  Use a large ice cream scoop to form balls of dough.  Place the balls about 4 inches apart on the sheets.  Bake until golden brown about 14-18 minutes.
