Eat Clean Quick Chocolate Mug Cake with Coconut Sugar

4 tablespoons coconut sugar
4 tablespoons flour (unbleached whole wheat or soft white grain if you grind your own)
2 tablespoons cocoa (dark chocolate is best)
1 organic egg
3 tablespoons organic milk
3 tablespoons oil (I used coconut oil)
3 tablespoons chocolate chips (optional)
a small splash of vanilla extract
1 large coffee mug (microwave proof)

Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly.
Pour in the milk and oil and mix well.
Add the chocolate chips (if using) and vanilla extract, and mix again.

Put your mug in the microwave and cook for 2 ½ - 3 minutes.  The cake
will rise over the top of the mug, but don t be alarmed! Allow to cool a
little, and tip out onto a plate if desired.  I cut mine in's enough for two people a treat.

Coconut sugar is great for baking and has a low glycemic index and is full of vitamins and minerals.  See my post here for coconut sugar.  It does still have calories so use for a treat.

I am going to try this with truvia or xylitol and let you know how that turns out sugar free :D

This taste a lot like chocolate chip pound cake!!

All my ingredients

Mix the dry ingredients in the mug

add the rest and mix well

put in microwave for 2 1/2-3 min

here it is dumped out of's big

so I cut it in to two slices.....yum and quick!!
