Donut Muffin

I made these in the mini muffin pans.  The original recipe says they taste like a donut..I changed them up a little to add more flavor and nutrients and they are really good.  I will post both versions..original and queen style :) Thanks to my new friend Michelle for the recipe and letting me  grind flour at her house every Wednesday :)


Donut Muffins Queen B Style

1 1/2 cup fresh ground flour (hard red and hard white or soft white mix)
1 ½ tsp. baking powder

1/2 cup flax seeds ground
½ tsp.  sea salt
¼ tsp. Cinnamon

¼ tsp nutmeg
½ cup kefir milk
1 egg
1/3 cup butter
½ cup sugar
1 tsp. vanilla

1 tsp almond extract
1/2 cup unsweetened applesauce


Combine first 5 ingredients. Combine last 5 ingredients separately. Pour wet mixture into dry mixture and stir just until moistened. Pour into muffin cups sprayed with eat clean cooking spray and top with streusel.

Streusel Topping:

2 Tbsp. softened butter
¼ cup chopped pecans
¼ brown sugar
2-3 Tbsp. wheat flour

Combine until crumbly and sprinkle over each muffin before baking.
Bake at 350 for 20 minutes

I also made 3 varieties.. I used sucanat on the topping instead of brown sugar mixed with some flour and oats to make it crunchy..did the same thing with sucanat sugar and walnuts instead of pecans.  I like them all. The kids like the ones with no nuts of course.

Mix your strusel topping..above is pecans
Her is the one with oats
Place strusel mix on top of muffin batter

Yummy Muffins..the fetus twins in my sister's belly liked them!
