Healthy and Clean Chicken Stir Fry

Chicken Stir Fry
olive oil
2 Chicken breasts
3 stalks of celery chopped
half an onion chopped
1/2 can water chestnuts
miracle noodles or whole grain rice
sea salt and pepper to taste
splash of low sodium soy sauce

Cook chicken in olive oil until no longer pink in a large skillet.  Slice into chunks.  Add onions, celery, and water chestnuts and a splay of soy sauce.  Cook until veggies are tender.  Salt and pepper to taste and then add miracle noodles.  They come already cooked in a bag, so when they are warm..serve and enjoy.

If you don't like my choice of veggies..add your own choices that you like in stir fry.  If you don't know what miracle noodles are..they are also called shiritake noodles.  I order them off ebay.  They are the cheapest there.  I have yet to find any in a store anywhere!  They are a free food! What's that?!?! It's just fiber, no calories, no carbs, just yam root.  I know, you think I am nuts..what do they taste like? Nothing..they absorb the flavors from what you are cooking.  Yes, Vickie Cox, I put miracle noodles on here :) If you are afraid of them or just don't want to use them...use a healthy whole grain rice like the one pictured below!
