Eat Clean Baked Ziti




Ingredients:
1 lb organic ground beef
2 cups of shredded sweet carrots
1 small onion
1-2 Tbs extra virgin olive oil
26 oz can of organic crushed tomatoes
1 cup organic chicken broth or vegetable stock
8 oz brown-rice penne (I personally use no grains now so I use shiratke noodles)
2 Tbs fresh basil leaves chopped fine
2 ups low fat shredded mozzarella (optional)

  1. In a large skillet, heat olive oil over medium heat and cook ground beef,carrots, onion, and garlic until browned.  Add chicken or vegetable stock, tomatoes, pasta and basil.
  2. Reduce heat and simmer for about 30 minutes or until pasta is al dente.
  3. Preheat oven to 350.  Spray baking dish with eat clean cooking spray (I use the pampered chef  rectangular baker) Turn pasta mixture in to dish and press down lightly with a spoon.
  4. Sprinkle with cheese, if using. Place in oven and bake for 20 minutes or until cheese is melted and golden.

1. Brown beef in skillet

I buy the already bag of shredded carrots and chop them in to fine little bits with my pampered chef chopper
so the children don't see them :)

I do the same thing to my onion

Add the carrots and onion to beef mixture

 

You can use fresh pressed garlic or this kind found in jar in the produce section. Add it to the beef.



Add chicken stock..I used organic chicken broth here.

Add organic crushed tomatoes

 
Add fresh chopped basil


 
Add brown rice penne noodles to the mixture or shiratake grain free noodles


Simmer for 30 minutes until pasta is al dente



Pour in to pan and press lightly with a spoon
 Add cheese..I like to use organic but I couldn't find it in the mozzarella at Ingles so I had to go for the next best thing..





Finished baked ziti..yummy!!
