Eat Clean Chocolate Chip Muffins

2 1/4 cups freshly milled flour (half soft white wheat and half hard white wheat) or whole wheat flour if you can't grind your own
1 tsp. salt
1 tsp. soda
1 tsp. baking powder
3/4 cup Sucanat

2 Tbsp Honey
1/2 cup chocolate chips
1 cup buttermilk
1 egg
1/2 cup oil
Measure dry ingredients into mixing bowl. Add liquids and mix just until well blended. Drop by spoonfuls into greased muffin tins. Bake at 350F for 15 min.

* if you make these for children, you can use regular milk instead of buttermilk and add a little more honey to sweeten.

  1. Made these on Saturday and put them in the freezer to pull out during the week for a healthy and delicious quick breakfast with a glass of milk and an apple on the go with the kids!!!
