2 cups of warm water
1/3 cup of Extra Virgin Olive Oil
2 Tbsp lecithin
1/3 cup honey
1/2 cup ground flax seed
2 tsps gluten
4-5 cups whole wheat flour (fresh ground if possible)
3 tsp (or one small packet) of instant yeast
2 tsp sea salt
1 pinch of ginger(not for taste, but for yeast to rise better)
I use the bread machine for the hard part (kneading) and then let rise in pans and bake in the oven:
Bread machine instructions:
Pour all liquids in to bread machine first. Then add the flax seeds, gluten, lecithin, salt, and flour in that order. Make a well in the flour and add yeast and a pinch of ginger. Set your bread machine to the dough or whole wheat setting. Let it go through the knead and rise cycle twice. Take out and let rise in two loaf pans sprayed with the clean eating cooking spray and cover with a light weight kitchen towel. Let the dough rise for about 30- 1 hr until they reach over the top of the pans. Bake in a preheated 400 degree oven for about 25-30 minutes. Remove and immediately turn the loaves out of the pan. Wait 2 hrs to cool before bagging.
NOTE TO THOSE WHO GRIND FLOUR: I soak my fresh ground flour overnight..mix everything together except the salt and yeast..a long with 4 Tbsp of Kefir or Lemon Juice to help break down phytic acid. Let soak at least 7 hrs or overnight. I do this in the bread machine and leave it on the counter. Then add salt and yeast and a pinch of ginger in the morning and turn the machine on :D
By hand:
In a large bowl, mix the ingredients together in the order shown, keeping about half the flour aside. When you have a good pasty mixture, add the remaining flour. At some point, you will need to remove the lump of dough and knead by hand on your counter top. Knead until the dough no longer sticks to your hands. Let the dough rise (Covered with a clean dish towel) for about 30 minutes or until the lump is about twice the original size). Knead back down to the original size (usually 5-7 min), divide the lumps according to the number of loaf pans you will use. Spray the loaf pans with the clean eating cooking spray and cover with a light weight kitchen towel. Let the dough rise for about 30- 1 hr until they reach over the top of the pans.
